I've said it before and I'll say it again. I love soup. It's comfort food to me; I could eat it every day and never get bored. (and this time of year I often do!)
Soups are a great way for anyone looking to incorporate more vegetables into their diet, and are an extremely helpful tool in achieving those weight loss goals. I just like it because the varieties are endless and it makes a quick, inexpensive, and satisfying meal. Here's my simple vegan version of an old favorite.
Potato Broccoli Soup
1 quart vegetable broth
1 small red onion, diced
1 clove garlic, minced
1 bay leaf
1 very large head broccoli, chopped
12 medium potatoes, diced, (I use organic potatoes and leave the skins on)
Place all ingredients into a large pot. Bring to a boil and simmer 20 minutes till veggies are tender. Remove bay leaf and serve with a sprinkle of freshly cracked black pepper.
