Broccoli and peanut sauce are a perfect match, their flavors were just made for each other. Folks who don't particularly like broccoli will often eat it when it's combined with peanut sauce. The same holds true for those who claim to not like peanut butter. My son balks on the rare occasion that I make him a peanut butter sandwhich to take in his lunch, but if I make peanut sauce and broccoli- he's all over it. One of the nice things about this dish is that it comes together quickly when you are running short on time, and it tastes good cold if you have leftovers.
A sprinkle of sesame seeds on top is yummy too, but I was all out this time.
Broccoli and Noodles with Peanut Sauce
1 head broccoli, cut in pieces
12 oz. whole grain linguine
2 cloves garlic, minced
1/2 c. peanut butter
2 T. soy sauce
2 T. rice vinegar
1 T. honey
1 tsp. red pepper flakes
1 T. freshly grated ginger
2/3 c. warm water
Lightly steam broccoli. At the same time cook noodles. In blender combine garlic, peanut butter, soy sauce, rice vinegar, honey, red pepper flakes, ginger, and water till you have a smooth sauce. If needed add a little more water. Pour sauce over cooked noodles, toss to coat, top with broccoli.
