Pasta with Pesto and Veggies

I had a busy and productive weekend, but not a lot of time for cooking.  On Saturday I went to a quilt show at a local church, this was the first show I've been to in years. I tend to be very shy, but was made to feel so welcome, I never even thought about it.  I really enjoyed it, I had forgotten how much fun crafty people are! There were some amazing quilts on display, now the wheels are turning in my head, lots of ideas are playing around there.  I am also considering starting a craft blog when time allows. After the show I came home inspired to work for a few hours on a quilt that's been half done for a few years. Now it's three quarters done ;)
For dinner I threw together a quick meal of pasta and veggies, so I could hurry up and get back to work.

I served it with some roasted garlic and asparagus. I have been eating so much raw food lately that I was really craving a cooked meal.

Pasta With Pesto And Veggies
 
1 lb. pea pods
1 red pepper, sliced
1/4 of a red onion, diced
1 clove garlic, minced
2 tomatoes, chopped
few tablespoons water or veggie broth
1 lb.whole wheat rotini, cooked and drained
 8 oz. homemade or your favorite pesto
 
Cook pasta and drain.
While pasta is cooking, stir fry pea pods, pepper, onion and garlic in a little water or veggie broth  4-5 min. till crisp tender. Add tomatoes and cook a minute or two longer. Toss veggies with pasta and pesto.
 
This goes well with salad, but I needed a break from all the salads I've been eating, so I roasted some asparagus to go with it.
