On Saturday my mom's side of the family had a reunion of sorts, a big potluck picnic. It was wonderful to catch up with relatives I hadn't seen in over twenty years. It's funny, no matter how many years pass, nothing changes family. Everyone's different, and everyone belongs. Everyone was to bring a dish to share.
Since I know that our eating habits are not like the rest of the family, I just brought food for us. We ate our veggie subs, fruit salad and raw cookies, while the rest of the fam ate burgers, hot dogs, chips, cake, cheesecake, pop, etc. and everything worked out smoothly. Here are the raw cookies I made.
Raw Snowball Cookies
1 1/4 c. raw walnuts
1/4 c. raw brazil nuts
12-15 raw medjool dates, pitted
1/3 c. raw cacao
about 1/4 c. raw unsweetened shredded coconut
In food processor grind nuts till fine, add dates and process till dates and nuts begin to blend, then add cacao and process till mixture is nearly smooth. Form into 1 inch balls, roll in raw coconut. Chill till ready to eat.
These are a delicious cool treat on a hot day, enjoy!
